Octopus 47F cooling, black beans 57F cooling, beef cooked yesterday 49F cold holding, raw beef 51F cold holding, chicken 47F cold holding. In walk in cooler. Per Operator, door was opened by staff used that adjusted temperatures of products.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. White rice 127-130F hot holding in rice cooker reheated and temperature was 171f reheating And, Black beans 77F hot holding. Staff voluntarily discarded.
