Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Make line in between three burner range and oven: raw shrimp (53F - Cold Holding); cooked chicken (56F - Cold Holding); diced tomatoes (46F - Cold Holding). Manager place in walk in cooler shrimp retemped at 42f, cooked chicken at 48f, diced tomatoes at 45f. Middle unit across from char grill: diced tomatoes (45F - Cold Holding); sour cream (45F - Cold Holding), cooked onions (47F - Cold Holding); sliced tomatoes (51F - Cold Holding) Manager closed cooler diced tomatoes temped at 43f, cooked onions at 46f, and sliced tomatoes 50f. Manager iced down product.
