Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dish machine not properly sanitizing dishes and I was unable to read chemical PPM. Operator set up three compartment sink during time of inspection. Advised operator to discontinue dish machine until problem is fixed. Three compartment sink set up: Quaternary: 200PPM.
