Operator stated foods have been in reach cooler in less than an hour prior to inspection. Cooler is in defrost mode. Operator added decided to go on time control and stated foods will be discarded at 2:30pm. Establishment has time stamps on all foods.
Handwash sink used for purposes other than handwashing. Observed both hand sinks at the inside bar used at dump sinks. Discussed with operator hand sinks are for hand wash only to prevent and reduce cross contamination. Operator removed strainer and products away from hand sinks.

Operator stated foods were placed from the walk in cooler to the reach in around 1:30pm. Operator placed foods in the walk in cooler to allow foods to cool down to 41F degrees.
