Raw animal food stored over/not properly separated from ready-to-eat food. In the walk in cooler observed a package of cooked lobster meat placed below a container of raw calamari. Operator arranged for proper storage.
Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. On main menu observed, "beef carpaccio" operator stated dish is served with raw beef. Operator began marking menus.
Wet mop not stored in a manner to allow the mop to dry at the mop sink. Observed wet mop directly on floor.

Handwash sink used for purposes other than handwashing. At the bar, observed the handwashing sink used as a dump sink. Discussed with operator handwashing sinks are to only be used for handwashing to prevent and reduce cross contamination. Operator removed all objects from handwashing sink.

Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In the walk in cooler raw chicken was placed with raw pork in the same container. Raw chicken placed above ground beef. Operator properly stored raw meats.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In steam table tomato sauce (114F - Hot Holding); tomato sauce with meat (114F - Hot Holding). Operator changed to a higher temperature
No paper towels or mechanical hand drying device provided at handwash sink. In the dish machine area no paper towels provided at handwashing sink. Operator provided paper towels.
Required employee training expired for some employees. Maria date expired: 1/31/25 Eric date expired: 1/31/25. Operator stated they have employee training already scheduled.
Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained. Some of the employee training certificates are photocopied.
In-use tongs stored on equipment door handle between uses. Operator removed and properly stored tongs.

Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Raw ground cuts of beef and raw chicken were stored directly above raw fish in the walk-in cooler. Chef rearranged proteins to proper storage hierarchy.
Toxic substance/chemical improperly stored. Spray bottle marked "Purrell" contained an orange-ish liquid, stored in the prep area. Purrell is a yellowish clear solution. Chef discarded.

In-use utensil for non-time/temperature control for safety food not stored in a clean, protected location. Soda gun at the bar was stored in a holster with excessive build-up.
