Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut lettuce (50F - Cold Holding) at the front line. The lettuce was approximately 3 inches above the top of the pan. As per the cook the lettuce was put on the line approximately three hours ago. The cook put half of the lettuce in another pan and put it the freezer for a quick chill.
