Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler facing hallway wall, observed cut tomatoes (51F - Cold Holding); mozzarella cheese (53F - Cold Holding). Foods are filled above the fill line. Operator stated foods were filled less than an hour prior to inspection. Operator reduced the amount of food and placed the rest inside reach in.
Stored food not covered. Observed the reach in cooler located in main kitchen area facing wall and hallway without a lid. Food was not currently in use. Discussed with operator food that is stored and not in use must maintain covered. Operator provided reach in cooler lid and protected food.
