Per operator items not prepared or portioned today. Items held out of temperature for less than 1 hour. Advised operator to make smaller portions in flip top cooler. Operator placed lettuce in walk in cooler to bring to 41F. Operator decided to discard ham.
Handwash sink used for purposes other than handwashing. At pizza station handwashing sink used as a dump sink, evidenced by hot plate left in sink. Advised operator of proper use for handwashing sink. Operator removed hot plate.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator unable to provide chemical test kit for triple sink. Used inspector test strips. Advised operator to have at next unannounced inspection.
