Spoke to person in charge during inspection about importance of handwashing and making sure hand was sinks are accessible.
Food preparation area has soil/old food residue. Observed active preparation of food taking place on same prep table dirty dishes with leftover food from returned plates are being stored. Person in charge began moving to dish area. Requested person in charge remove dishes and sanitize table before continuing to use for prep.
