Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Ham and cheese in white reach in cooler in back kitchen at 45-47F. Person in charge states has had door open. Person in charge turned unit down. Moved to walk in freezer to rapidly chill. Temped at 43F or below by end of inspection. Also opened containers of UHT coffee with whole milk as ingredient at 84F.
