Observed sliced chicken (45F - Cold Holding); whipped butter (66F - Hot Holding); sausage (50F - Cold Holding). Chicken has been taken in and out of cooler for approximately two hours. Discussed time control or leaving it in the top portion of the flip-top cooler. Whipped butter left on counter and taken in and out of cooler for approximately 30 mins per person in charge. Person in charge placed both products in cooler too cool
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed large portion of house made guacamole left above chill line of flip-top cooler ambient air cooling. Discussed cooling methods in reach in cooler or reach in freezer.
