Employee failed to wash hands before putting on gloves to initiate a task working with food. After handling ware washing equipment and chemical sanitizer solution, employee failed to wash hands prior to applying gloves and begin working with food. Educated operator on proper handwashing procedures, employee washed hands and reapplied gloves.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Over filled container of cheese held at 51F for less than 2 hours in shallow bin of ice in cold holding unit right of tortilla press. Operator placed cheese container into deeper container of ice to ensure proper cold holding.
Non-pitting surface rust on food-contact equipment. Can opener at back prep table rusted.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Bottom shelves of dish ware wire rack by triple sink are heavily rusted.
