Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Upon inspection, observed cooked ground beef in hot holding cabinet with temperature of 132f. Date/time stamp on container stated beef was prepped approximately 15 minutes earlier. Operator placed ground beef in oven for reheating during inspection. After heating, temperature noted to be 187f.
