At time of inspection observed 7+ food employees engaged in food and beverage preparation, while serving approximately 25 customers.

Shelf is used to store metal pans/trays. At time of inspection Owner provided a invoice for pest control, conducted by Pioneer Pest Control, INC on 1/27/2024.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed sausage (121F - Hot Holding) on shelf above cookline, less than 4 hours. Advised Chef reheated to 135F and above. Observed chicken soup (110F - Hot Holding) located at steamtable unit, less than 4 hours. Chef reheated chicken soup to 190F. Observed arepas (66F - Hot Holding); sautéed vegetables (84F - Hot Holding); chicken soup (94F - Hot Holding) located at kitchen prep area, less than 4 hours. Chef placed food items into reach in cooler.
No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Observed no certified food manager present at time of inspection with 7+ employees engaged in food and beverage preparation. As per Owner, Arturo Lopez, all food managers not scheduled to work at time of inspection.
