Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In top of reach in cooler on cook line, sliced ham (57F - Cold Holding). Sliced ham was stocked over fill line 1 hour prior. Manager had employee removed some ham from pan and place in bottom of cooler.
