Observed in stand alone cooler Pasta salad (48F - Cold Holding); Cooked Pork (52F - Cold Holding); burnt beef ends (46F - Cold Holding); Brisket (48F - Cold Holding); Sour cream (46F - Cold Holding). Operator stated the drive was about an hour 1/2 in cooler without generator being on. Cooler has an ambient temperature of 33F. Operator placed ice on all TCS items.

Operator stated commissary letter is at home, he only needs the license number of the restaurant he uses, Donatos, he will email it to me later, big crock pot has to be wash, rinse and sanitize at commissary because it doesn't fit in his small triple sink
