Observed cooked chicken (112F - Hot Holding); cooked wings (68F - Hot Holding) tempura shrimp (107F - Hot Holding), as per operator less than an 30 min in the hold holding unit. Chef increased temperature.
Toxic substance/chemical improperly stored. Observed oven cleaning spray stored next to clean pots and pans; the operator immediately relocated the chemical to a proper storage area.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed cooked chicken at 82°F cooling on top of a prep table. The operator stated the chicken had been there for less than an hour. Coached the employee to transfer the chicken into a larger container and place it inside the walk-in cooler for rapid cooling.

Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed shrimp (50 F - Cold Holding) in the same unit. As per person in charge shrimp were out of temperature for more than 4 hours, shrimp were stored last night. Stop sale was issued.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed dumplings (55 F - Cold Holding); spring rolls (55 F - Cold Holding) at the cook line as per person in charge food was placed inside the unit at 11:00 AM this morning. Employee placed the food inside the walk in cooler to bring temperature down. Also observed shrimp (50 F - Cold Holding) in the same unit. As per person in charge shrimp were out of temperature for more than 4 hours, shrimp were stored last night. Stop sale was issued.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed a hose connected by the exit door.
Employee has not received adequate training related to their assigned duties as evidenced by the inability to answer basic food safety questions. Observed employee did not know how to sanitize utensils at the 3 compartment sink. Employee was coached.
