Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Observed high temperature dish machine being serviced at the time of the inspection,as per operator no sanitizing,operator set up 3 compartment sink.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chlorine test strips available at the time of the inspection.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses.
Warewashing machine not equipped with a visual or audible alarm to verify the delivery of detergent and sanitizer. Observed no thermal strips or non reversible thermometers available for the high temperature dish machine.
