Observed pizza station: sausage (52 F - Cold Holding); ham (52 F - Cold Holding); chorizo (52 F - Cold Holding) at reach in cooler pizza station. As per operator for 3.5 hours. Operator moved the products to a walk n cooler for rapid cooling.
