Rodent activity present as evidenced by rodent droppings found. Observed approximately 46 rodent droppings: Approximately 30 rodent droppings behind reach in cooler and steam well at front counter 4 rodent droppings under stove at front 7 rodent droppings behind the fryer and hot holding unit 4 rodent droppings under the three compartment sink 1 rodent dropping under the bag in box soda rack
Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Food handler training for Caleb J expired on 3-24-2023.
Accumulation of dead or trapped birds, insects, rodents, or other pests, in control devices. Observed four dead roaches in two sticky traps under steam table area on front line.
Bowl or other container with no handle used to dispense food. Bowl used as a scoop in bag of breading on back storage rack. Operator removed bowl.
Hole in or other damage to wall. Hole in door to front line.
Utensils in poor condition. Two rubber spatulas hanging oat three compartment sink have rubber pieces missing on the food contact surface.
A return visit. The problems from the previous inspection had been dealt with.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut tomato (49F - Cold Holding) in reach in cooler at front. Per operator, placed in reach in cooler from walk in cooler approximately 2.5 hours prior. Operator voluntarily discarded cut tomatoes.
Ceiling/ceiling tiles/vents/floors/walls soiled with accumulated food debris, grease, dust, or mold-like substance. Floor under reach in cooler closest to register is soiled. Floor under three compartment sink is soiled.
Dead roaches on premises. Approximately three dead roaches in sticky trap under soda fountain at front counter and approximately five dead roaches around the sticky trap. Operator discarded dead roaches and sanitized area.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Employee cell phone on top of single-service silverware in box at front register. Employee moved cell phone to proper storage.
Hole in or other damage to wall. Walk under hand wash sink at front counter has a hole in the wall.
Standing water in bottom of reach-in-cooler. Bottom of reach in cooler by register has standing water.
Wiping cloth chlorine sanitizing solution not at proper minimum strength. Sanitizer bucket at front kitchen tested at 0ppm chlorine. Operator remade solution to 50ppm. Also, wet wiping cloth on counter in front of steam table at front kitchen. Operator moved to sanitizer bucket..
