At Flip top cooler; cut lettuce (50F - Ambient Cooling 12:15/50F 12:50); cut tomatoes (47F - Cooling 12:15/47F 12:50). Operator stated items cut less than 1 hour prior, coming in pans on make top at this rate will not reach 41F within 4 hours, moved to upright reach in cooler.
