Manager stated the two pans of chicken were cooked the previous day and placed into the walk-in cooler to cool. Ambient air temperature is 58F. Stop sales issued.

Manager portioned the noodles into two pans and added ice to rapidly cool the noodles to 41F. 2. Inside walk-in cooler: milk (61F - Cold Holding); milk (46F - Cold Holding). Manager stated the milk was delivered three hours prior and placed it into the freezer to rapidly cool to 41F. Ambient air temperature inside walk-in cooler is 58F.
