Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed beef patties hot dogs hot holding at 119F on stove top. Operator stated they had turned heat off 1 hour prior. He turned heat back on and reheated to 167F and then turned it to hot holding.
