Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed beef empanada (122F - Hot Holding) in hot display case, educated operator on proper hot holding temperature. Operator increased the temperature of the hot case.

Bowl or other container with no handle used to dispense food. Observed bowl used as scoop in brown sugar.

Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle.
Mobile food dispensing vehicle service opening not kept closed except during food service. Observed door to mobile unit open during inspection, the operator closed the door.
