Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. ambient temperature of shelled eggs (55F - Cold Holding). Operator had eggs out earlier when loading food truck. Operator stated she will keep the eggs in cooler until ordered to chill.
