Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler across from cook top, cut tomatoes (52F - Cold Holding); sliced ham (49F - Cold Holding); chicken salad (48F - Cold Holding); tuna salad (52F - Cold Holding). Operator stated foods were moved to reach in at 7:30am. Operator began to reduce amount of product to reach fill line on pans.

Operator spoke with employee on proper handwashing in between handling raw foods and ready to eat food contact surfaces. Employee washed hands and changed gloves.
