Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked shrimp (88F - Hot Holding) for less than 4 hours as per operator. Operator reheated it at 165°F.
Warewashing sanitizing solution exceeding the maximum concentration allowed. Observed three compartment sink with quaternary sanitation solution of 400 ppm. Operator add water. Recheck 200 ppm.
