Employee switched from working with raw food to ready-to-eat food without washing hands. Observed cooked handle raw beef, then moved to touch a bread bag. Inspector coached employee to wash hands and replace gloves.

Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Raw beef burger patties stored above raw fish in reach in drawer cooler by dish machine area. Raw steak stored above raw shrimp in reach in cooler drawer. Operator removed.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed multiple ROP cooked soups in the reheating process and in walk in cooler
