Nonexempt fish offered raw or undercooked has not undergone proper parasite destruction. Fish must be fully cooked or discarded. Barracuda, snapper. Operator receives fish wild caught and fresh. Then cleans and drys them for 5 minutes. Then freezes them at -89C for 2 days or more. Advised operator they must be able to constantly track temperature of frozen fish and be able to provide documentation. Wild caught fish can not be served raw unless documentation proof of parasite destruction has been provided
