At kitchen reach in cooler, raw chicken wings (47F - Cooling)@1:25 since 11:00, 47F @1:51. At the current rate, item will not reach 41F within 4 hours. Advised operator of proper cooling parameters. Operator moved items to to walk in cooler to fascilitate cooling.
