Observed butter at 51F at 10:00 in white each in cooler. per operator, items not prepared or portioned today, items removed from reach in cooler and out of temp for 15 min 51F. operator placed in freezer to quick chill. Items 43F at 10:30.

Container of medicine improperly stored. Antacids stored over prep table. Operator removed.
Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Operator stated dish machine high temperature, advised operator to set up 3 compartment sink, chlorine 100 ppm. Chlorine is only sanitizer available.

Wash solution in spray type hot water sanitizing dishmachine not reaching proper temperature according to manufacturer's specifications. Operator not using high temperature dish machine at time of inspection. Inspector put plate in dish machine with DBPR provided heat strip and observed no color change on heat strip. Advised operator to Set up and use three compartment sink to sanitize utensils until high temperature dish machine is functioning properly.
