Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler at the fryer, tempura chicken (60F - Cold Holding). The chicken had been held on the table at room temperature next to the fryer then placed back into the cooler to chill and cold hold. The chicken was put on to a shallower pan moved to the walk in cooler to more rapidly cool.
