Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken over raw shell eggs in walk in cooler. Raw chicken should be below raw eggs because minimum cooking temperature for chicken is 165F or above and minimum cooking temperature for raw eggs is 145/155F. So raw chicken needs to be below raw eggs because it has a higher cooking temperature. Operator is re-educated and put raw chicken below raw eggs
