Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Observed TCS cheese cold held at 47°F in flip top cooler. Per operator, cheese placed in unit 2.5 hours prior to the inspection. Operator transfer cheese to another unit for quick chill.
