Person in charge began removing excess. Also, in 4 door lowboy at front counter, cheese at 48F. Person in charge states unit has been open and items out for stocking. Ambient temperature of unit got down to 44F from 50F during inspection. Person in charge will monitor.

Dishmachine testing at 0ppm. Dishmachine giving warning on screen about sanitizer during inspection. Person in charge will utilize triple sink to sanitize until unit can be serviced.
Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed dishwasher at dishmachine handle dirty dishes, then handle clean dishes without hand wash in between. Person in charge spoke to employee.
