Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Cooked pork (103-116F - Hot Holding); cooked beef (121-127F - Hot Holding), both items stored in steam table and place there approximately 1 hr ago after cooking. Steam table was turned on recently and filled with water and reading @ 135F ambient water temperature under bottom of pan. Manager voluntarily discarded instead of reheating product because didn't want to get to dry out after reheating again.
Toxic substance/chemical improperly stored. Plastic bottle of hand sanitizer stored on top of flip top reach in cooler. Moved by manager.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Homemade cacao drink stored in reach in cooler not date marked and employee stated was prep on Tuesday of this week.

Operator has 2 total food handler employees hired over 60 days with no proof of current food handler certificates. Person in charge showed me copies of third party train certificates for those 2 Employees E. Perez and K. Antunez
