Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Upon inspection, observed chicken wings 120f (less than 4 hours per manager) on buffet at establishment.
Dead roaches on premises. Upon inspection, observed dead roaches in the following locations: 1 on floor under table in rear dry storage area, 2 under storage shelf near rear exit door of establishment.
Stored food not covered. Upon inspection, observed storage container of green beans uncovered in walk-in cooler.

Bare hand contact with ready-to-eat food while the establishment is under a foodborne illness investigation. Chef collected cooked noodles from walk in cooler, placed noodles in to go box. Inspector discussed barehand contact and hand wash procedures. Establishment moved noodles to reheat to 145F.
Chlorine sanitizer in spray bottle not at proper minimum strength. Unable to get reading on ppm sanitizer. Sanitizer contents unknown.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Breaded Chicken 50F/46F, Breaded Chicken 46F/44F, Breaded Chicken 47F/46F all less than 30 min. Manager stated door to walk in was frequently opened during buffet setup.
No chemical test kit provided when using sanitizer for wiping cloths.
