Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Shredded Mozzarella Cheese (53F - Cold Holding); Housemade Tomato Sauce with Spices (47F - Cold Holding); Fresh Mozzarella Cheese Balls (49F - Cold Holding); and Fresh Garlic in Oil Mixture (47F - Cold Holding) in reach-in cooler. Operator stated items had been in reach-in cooler since 2:15 PM. Operator is currently powering truck with a smaller generator and plans to use larger generator for more power supply moving forward.
