Observed shrimp (45F/47F - Cold Holding); chicken (49F - Cold Holding); sprouts (56F - Cold Holding); chicken (52F - Cold Holding); tofu (51F - Cold Holding); pork (45F - Cold Holding) in flip top reach in cooler in kitchen. Operator voluntarily discarded tofu. All other products were placed in the flip top reach in cooler between 1 hour and 1.75 hours. All moved to reach in freezer.
