Clam/mussel/oyster tags not maintained in chronological order according to the last date they were served in the establishment. Discussed with manager marking requirements with date last sold and to maintain in chronological order.
Employee personal food not properly identified and segregated from food to be served to the public. Can of Bang eagerly drink stored inside reach-in cooler next to drying rack in the dish pit. Drink was removed from cold holding unit.
Equipment and utensils not properly air-dried - wet nesting. Containers being stored on the drying rack in a manner that would not allow proper drying. Wet nesting observed on containers. Kitchen manager instructed employees to begin placing containers in a more effective manner for drying.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Utensils observed in standing water at 100F. Kitchen manager removed items and replaced with hot water at 135F.

Old labels stuck to food containers after cleaning. Old labels still on food containers after washing. Kitchen manager began having all old labels removed during inspection by employees.

In-use tongs stored on equipment door handle between uses on cooks line. Employee removed tongs.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Scoop handle touching flour in container at end of cooks line. Operator removed scoop.
