Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sliced ham ( as kitchen staff less than an hour) (60F - Cold Holding) at buffet line. Staff moved sliced ham to reach in freezer for rapid cooling, (2nd Temp 43°F)

No conspicuously located ambient air temperature thermometer in holding unit. Observed not ambient thermometer at reach in cooler at kitchen area. Staff provided anew thermometer.

Self-service salad bar/buffet lacking adequate sneezeguards or other proper protection from contamination. Observed sliced tomatoes and cut lettuce at self-service salad bar not protected at buffet line.
