Cold holding: cut turkey 50 F, mozzarella 48 F, cut lettuce 47 F, Per operator all items were put in cooler at 10 am. Time temped 1 pm. Operator put in walk in cooler to bring back down to temperature. Cold holding: feta cheese 47 F, cooked pasta 48 F, heavy cream 46 F, cooked meat balls 47 F, Per operator items were in walk in cooler while walk in cooler was open for large catering order at 12 pm.
