Observed the following in deli case: deli case:roast beef (45F - Cold Holding); ham (47F - Cold Holding); provolone (47F - Cold Holding). Items in prep area reach-in-cooler were voluntarily disposed of by operator. Items in deli case temperature was turned down and door was kept shut for 15 minutes and items in deli case were rechecked at ham 43F cold holding, provolone 43F cold holding, roast beef 42F cold holding. Repeat 8-21-23

Operator stated the meatball had been put into steam pan 1.5 hours prior. Observed operator remove meatball from use place into pan and into reach-in cooler. Recheck temperature 30 minutes later 41F
