Observed milk in reach in cooler in wait station not date marked. Operator stated milk was open on Tuesday. Operator date marked milk during inspection.

No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed eggs on top of prep table in kitchen with time marked. Operator stated that he has form in email but does not have paperwork filled out. Inspector provided paper copy of time is a public health control to operator during this inspection to assist in filling out.

Employee touched face/hair and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee touched face and glasses with bare hands and continued to touch clean utensils and plates without washing hands in between tasks. Also employee wiped hands on soiled apron and continued to make food without washing hands in between tasks. Also employee came into work and began handling clean dishes without washing hands first. Spoke to both employees and both washed their hands.
Raw animal food stored over/not properly separated from ready-to-eat food. In reach-in freezer, raw sausage removed from original packaging stored over tater tots. Employee put sausage on bottom shelf.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At roll top cooler across from flat top, cooked ground beef(46F - Cold Holding,); cooked sausage (45F - Cold Holding). Per employee, he had been in and out of cooler multiple times during breakfast rush. On prep counter across from flat top, raw bacon (53F - Cold Holding). Per employee, he had bacon sitting out approximately 45 minutes while he cooked bacon for multiple orders. On counter under receiving line, individual butters (77F - Cold Holding). Per employee, he had butter sitting out approximately 2 hours to serve to customers upon request. Employee placed all items in reach-in freezer. All re temps at or below 41F.
