Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. In 3 door reach in freezer, portioned bags of raw pork above container of cooked pork. Employee moved cooked pork to right side freezer with prepared foods.

Per employee both out of cooler since 11:30am and neither portioned / prepped today. Employee placed butter onto grill to complete melting and hot hold and garlic oil into lowboy cooler to chill.

Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Operation conducted vacuum packaging on site for soft cheeses and portioned prepared food items with no HAACP plan created or on file.
