Observed pancake batter, sliced provolone cheese, milk, sliced American cheese (46F-47F - Cold Holding) in glass door reach-in cooler at end of cook line. Operator stated the door bounces back open when closes. Operator removed TCS foods and placed in nearby reach in freezer to chill. Retemped foods at end of inspection at 39F-40F Also, butter (52F - Cold Holding) in reach-in cooler across from grill. Operator stated he had it out to make grits a little while ago. Operator stated he will leave butter in reach-in cooler to chill.
