Employee entered establishment walked behind counter into kitchen then handled clean utensils and clean equipment to scoop ice for customers without washing hands. Operator discussed with employee who then washed hands.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At Grab and Go reach in cooler; sliced turkey and cheese sandwich (48F - Ambient Cooling 11:25/48F 11:45); sliced ham and pork sandwich (50F - Ambient Cooling 11:25/50F 11:45). Operator stated sandwiches prepared at/cooling since 8:30, at this rate will not reach 41F within 4 hours, moved to storage area reach in cooler/freezer to facilitate faster cooling.
