Establishment has no approved Alternative Operating Procedure. Employee at cookline touched a sandwich with bare hands. Inspector educated employee on glove usage and barehand contact during this inspection.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside reach-in cooler beside grill: cheese (55F - Cold Holding). Employee stated the cheese was held briefly on the counter approximately 30 minutes prior.
Employee washed hands in a sink other than an approved handwash sink. Employee washed hands in the three-compartment sink.
Employee with artificial nails/nail polish working with exposed food without wearing intact gloves. Employee with painted and/or artificial nails handling food at cookline without gloves.

Unwashed fruits/vegetables stored with ready-to-eat food. Mesh bag containing unwashed onions stored stored hanging directly above oil and bread at cookline. Manager moved onions away the area during this inspection.
A return visit. The problems from the previous inspection had been dealt with.

Employee washed hands in a sink other than an approved handwash sink. Employee at cookline washed hands in the three-compartment sink on two separate occasions. Inspector educated employee and manager during this inspection.
No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. One employee stated she has been employed for approximately six months it's no proof of food handler training. No other food handler training available in establishment. All other employees are certified food managers.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. One employee working at cookline without food handler training who has not signed the employee health reporting agreement. Employee stated she has been employed at this establishment for approximately six months.
Single-service articles improperly stored. Three sleeves of foam takeout cups stored directly on the floor in dry storage area. Manager placed cups on a shelf during this inspection.

Manager placed raw eggs on bottom shelf during this inspection. Raw shell eggs on shelf above cheese inside reach-in cooler in storage area. Manager placed raw eggs on bottom shelf during this inspection.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On counter at cookline: Pan of whipped butter 50F. Manager stated they keep the butter there during the day. Manager placed butter into cooler to cool to 41F. Inspector provided manager with TPHC documentation during this inspection.
