Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cooked chicken, cooked beef, cut tomatoes, cut lettuce, sliced pepper jack cheese (44F-51F - Cold Holding) in front display case. Discussed with employee morning procedures. Display cooler case turned on upon arrival and food placed in display case before allowing the temperature of cooler to reach 41F and below. Employee placed some of the items in walk in freezer to chill foods. Foods in display cooler case approximately 3 hours.
