Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. spicy crab salad (53F - Cooling) at 2:15; cooling since 11:30 - 52F at 2:35 Observed sitting on a cart at time of first temperature. Cook then placed in cooler. At current rate of cooling product will not reach 41F within 4 hours. Cook placed in reach in freezer to quick chill.
